GOTM: Confetti Quinoa
Mmmm...I forgot to make a post about GOTM (GOTY???) #2, but I must say it was really yummy. I guess I will just have to make it again so I can do a proper post about it. However since this post is about the third dish I made with quinoa I will go ahead and consider this GOTM #3. Every time I cook with Quinoa I grow more fond of its yummy nutty flavor and interesting texture. This dish was inspired both by one of my favorite Amy Meals and also a post by Megan the Vegan and it was also probably the most successful dish that I have made with out a recipe. I first cooked the quinoa in some veggie broth (Whole foods brand) which really gave it a delicious rich flavor. While the quinoa was cooking, I steamed some broccoli and fried up some purple onion, orange pepper and mushrooms. I dashed some 21 seasoning stuff from Trader Joes, a little salt, and some pepper into the onion mixture. Once the the quinoa was done cooking, I gently mixed in the broccoli and the onion mixture. This dish was so beautiful and colorful, I wish I had my camera with me. Oh well I guess you will just have to picture the purple from the onion, the crisp green from the broccoli and the bright orange from the pepper all juxtaposed against the light tan of the qunioa. Oh such a picture of health! I served the quinoa with some catfish that I had poached in white wine (and of course with a glass of the same wine). The meal came together in about 30 minutes and was so delicious and healthy!
